What does this do to my speedometer?

And record fewer miles.

How many ply are they?

The stock Maxxis Bighorn 2.0 are 6ply tires not 4 ply.

You probably want 9 psi front, 11 rear for unloaded riding then?

pfff... My 8 plys got a flat last hunting season on top of ridge in bitter cold. Sidewall!!!

The one time I neglected to bring my spare. Lazy mistake.

The stock OEM Big Horns are not the same as the aftermarket. Probably to keep the weight numbers down. Mine had 4 ply on the back and 2 ply on the front its a 2016.

Are you sure that the 2PR & 4PR markings are how many ply’s of the tire? I have never seen that type of markings to indicate “Ply”. It doesn’t seam likely to me that they would make the Bighorn 2.0 in so many different constructions.

The 27's should take you 8% more mph than 25's at the same speedo reading.

Real speed about Speedo x 27/25 = Speedo x 1.08.

^^^ Yep. Just a few layers better than a wagon wheel.
